The Health Buffet Amam in the resort spa Mizu no Uta, is as the name suggests, built around the concept of providing an all-you-can-eat buffet – but one that offers healthy food. In tandem with the spa itself, the hotel is aiming at revitalizing both body and mind. The food at the buffet is prepared with the minimum amount of salt and oil and is heavy on vegetables. Soups, fresh seafood, organic produce and select Hokkaido wagyu (Japanese beef) are all on the menu. The restaurant has a well-stocked wine cellar, with around 1,000 bottles lying in wait. Fresh desserts are made on the day, and there is a juice bar offering fruit and vegetable juice drinks. 3. Tokachigawa Onsen Daiichi Hotel

The buffet restaurant at the Tokachigawa Onsen Daiichi Hotel uses seasonal ingredients, local beef and pork and rich dairy products – also produced locally. The restaurant’s name, Komorebi – which translates as a sentence in English to “sunlight cascading through foliage” – is a perfect example of the Japanese approach to reducing a beautiful concept and representing it in the simplest way. Guests can pick their own ingredients to make kamameshi – a rice dish cooked in a pot – examples of what’s on offer include wild vegetables, scallops, prawns, bamboo shoots and edamame. The restaurant’s open kitchen allows guests to see their food being cooked freshly, right in front of their eyes.
